The truth about Chitin and how the body CAN and DOES break it down.
Humans can break down chitin with enzymes called chitinases. We humans produce two chitinases: Chitotriosidase 1 (CHIT1) and acidic mammalian chitinase (AMCase).
How does it work? Gastric stomach acids trigger the production of chitanese after eating chitin. Chitanese breaks down chitin into smaller fragments. The fragments interact with receptors on macrophages, which produce cytokines and mediators that stimulate the immune response.
